We are engaged in a late summer wrestling match
with the Baker's Muffin. Not pretty.
I imagine its like trying to get a child to behave.
Today, success. Tomorrow, we will see.

LEMON MERINGUE, NOW ARRIVING GATE 6

What became of a Lemon Meringue pie bought at Zingerman's in Ann Arbor, put in a
suitcase for flying back to NYC, but sort of forgotten about during a bumpy flight.

INTERGALACTIC PASTRY

Images being transmitted from the Mars rover Curiosity these past few days have been a revelation. However, I don't believe the image above, which arrived to me through a means best kept secret, has yet been released to the public. In the image, it appears the camera - 140 million miles away - has found Mini Plum Tarts with Sugared Blueberries on the Martain landscape. If true, this would be a profound and remarkable discovery for many of us in the pastry universe.

A mini-mini Blackberry Tart with ricotta,
a slice of plum and a touch of caramel.
A favorite lesson learned at an oven in Paris
long ago: Don't be afraid of good color.

City Bakery Maple Bacon Biscuit. We've been selling an awful lot
of these recently. Something pro-biscuit is in the air.

Day Two of a pastry work in progress,

which does not yet have a name.

But what is it?

Easier at this point to say what it is not:

not Rugelach, not Hamantaschen, not any kind of 'pocket'

['pocket' is the lowest form of a name for any pastry

in the history of pastry-making. pockets are for pants].

So what's in it? It is a Marscapone-based dough with a

filling of raspberry jam, a little chocolate and walnuts.

p.s. someone needs to make a candle scent from the smell

of raspberry jam baking.
